Tuscan Linguine Shrimp

If you love shrimp and are simply short on time you'll enjoy every bite of this recipe. It's easy and quick to make as the sauce can be cooked while the pasta is boiling. My first attempt at making this I had both the pasta and sauce ready at the same time. If I can do that so can you!

Ingredients

  • Linguine pasta
  • 1 pound of jumbo shrimp
  • 3 Roma tomatoes
  • 4-5 large garlic cloves
  • Fresh or dry basil
  • 1 lemon
  • Olive oil
  • Freshly ground black pepper
  • Salt

Directions

  1. Peel the shrimp and remove intestines unless already done
  2. Chop 3 fresh Roma tomatoes (regular tomatoes work too)
  3. Chop 4-5 large garlic cloves
  4. Wash and chop about 20 leaves of basil
  5. Squeeze all the juice out of 1 lemon into a cup
  6. Boil the linguine pasta
  7. Add a thin layer of olive oil in a pan and heat at medium
  8. Sautee garlic for about 1 minute till golden but do not brown!
  9. Add shrimp and cook for about 2 minutes on medium
  10. Add tomatoes and basil, cook for another 2 minutes
  11. Add pepper and salt to taste
  12. Add lemon juice to the sauce
  13. Remove the boiling water and put the pasta in the pan with the sauce
  14. Mix the pasta well and then serve
